This is a flavorful vegetarian and low carb dish that you can easily throw together in under 30 minutes. It’s also a great substitute for spaghetti and meatballs, but still packs all, if not more of the flavor you get from starchy Italian cuisine.
1 yellow bell pepper
1 jar pasta sauce (I used a chunky vodka sauce)
Meatless meatballs (found in the frozen healthy foods section)
Grated parmesan cheese for topping
Spiralizer (I bought mine on Amazon for $5)
Bake meatballs according to package directions
While those are cooking, spiralize your zucchini into noodles
Chop the bell pepper and sauté in a skillet with a teaspoon of oil until browning and soft
Add zucchini and sauté for 3 minutes
Mix in the pasta sauce
When the meatballs are done, combine everything onto your plate and sprinkle with Parmesan cheese.
