I have a special treat for you today! Have you ever tried a pitaya bowl? They are so delicious and pretty in pink too! Adding all your favorite toppings to this already delicious smoothie makes to even better. But could it get even better?! YES! Put it in a pineapple!
There's a place in San Diego in PB that sells smoothie bowls in pineapple boats like this. And I had planned to go get one, before realizing I had everything at home to make it myself! Preparing the pineapple boat takes a little time and effort, but totally worth it for all the cuteness.
Smoothie Bowl Ingredients:
Pineapple (cut into hallowed out boat)
1 Packet frozen Pitaya (sold at Sprouts)
1 Scoop Vanilla Protein Powder (I used vegan)
1/3 Cup Cashew Milk
Granola (I used Kashi clusters with pepitas)
Fresh banana slices
Fresh strawberry slices
Honey drizzle (Leave out for vegan)
Make pineapple boat - horizontally slice 1/4 inch piece from the top of the pineapple. Do not cut the leafs. Cut out the pineapple inside leaving 1/4 inch pineapple around the sides and bottom.
Blend together pineapple, strawberries, mango, banana, cashew milk & protein powder. Add extra water to loosen it up. Store in the freezer while preparing toppings to thicken up.
Cut fresh fruit and prep toppings.
Pour smoothie into pineapple boat.
Arrange in a cute way: granola, coconut, chia seeds, bananas, strawberries and honey drizzle.
