Want an easy to make snack packed full of protein that also satisfies your sweet tooth? I have the perfect (EASY!) recipe for you! It takes about 10 minutes to throw all the ingredients together, about 10 minutes to set and seconds to pop them in your mouth when hunger strikes! The other great thing about these balls is that they can be customized to whatever ingredients you have or want. Wnt ried cranberries? Throw those in! Want to use cashews or almond butter? Do it! Any concoction you create will be amazing and surely better than reaching for a packaged granola bar or other unhealthy quick snack option out there.
1 cup dry rolled oats
1/2 cup peanut butter
1/4 cup mini non-dairy chocolate chips
1/3 cup honey
1/4 cup sliced almonds
1/4 cup shredded coconut
1 tablespoon hemp seeds (shelled, unshelled will be crunchy)
1 tablespoon chia seeds
1 teaspoon vanilla extract
Stir all ingredients together in a medium bowl until thoroughly mixed.
Let the mixture chill in the refrigerator for 10 minutes or more.
Once chilled, roll into balls of whatever size you would like (smaller the better so you can eat more) I found that dampening your hands a bit will help you roll the balls easier.
Store in an airtight container and keep refrigerated for up to 1 week.
Makes about 20 balls depending on the size you make them.
