Here's a great, easy to make vegetarian recipe that packs a flavorful punch. This veggie on veggie dish takes just a few minutes to whip up and will leave you full and feeling great. You will need a zucchini spiralizer for this recipe. I bought mine for just 5 bucks from Amazon, and I love it! /this recipe could be customized with more veggies or different types based on the season and your tastes.

1 Bunch Asparagus
1 Jar Sundried Tomatoes in Oil
1 Jar Pesto (or make your own)
Garlic Powder, Salt and Pepper
Rinse and cut the tips off your asparagus.
Douse asparagus in olive oil, garlic powder and salt and pepper.
Bake asparagus at 350 for 15 minutes
While that's baking spiralize your zucchini into a frying pan.
Dice the sundried tomatoes into smaller pieces and add to frying pan with half the oil from the jar. Saute for 5 minutes.
Once the asparagus is done chop each spear into four pieces and add to the frying pan.
